Shrimp Stir Fry

Ingredients

The sauce

  • 3-4 tablespoons reduced soy sauce
  • 1-1½ cups chicken stock
  • 1 tablespoon cornstarch
  • 2 tablespoons honey or brown sugar

The stir fry

  • 1-2 tablespoons oil
  • 1 tablespoon minced garlic
  • 2 teaspoons minced ginger
  • ½ medium red onion
  • 1 pound large shrimps, peeled and deveined
  • 1 pound vegetables (sliced carrots, zucchini, snap peas)
  • 1 red bell pepper sliced
  • 1 green onion sliced
  • 3 leaves basil
  • 1-2 teaspoons red pepper flakes

Instructions

  1. Whisk together soy sauce, chicken stock, cornstarch, and honey; set aside.
  2. Heat oil in a skillet and sauté garlic and ginger for about 1 minute.
  3. Add onions and cook for another 2-3 minutes.
  4. Stir in shrimp and cook for 1-2 minutes.
  5. Pour in the soy sauce mixture and cook until it thickens.
  6. Add vegetables, red bell pepper, and green onions; stir for 2-3 minutes.
  7. Throw in basil and adjust seasoning with salt, pepper, and red pepper flakes.
  8. Serve with warm rice.
