Ingredients

The main ingredients

  • 24 oz Large shrimp (peeled and deveined)
  • 3 tbsp Olive oil (divided)
  • 6 cloves Garlic (minced)
  • ½ tbsp Fresh ginger (grated)
  • 1 large Red bell pepper (sliced into thin strips)
  • cups Broccoli (cut into bite-sized pieces)
  • 1 cup Carrots (julienned)
  • 1 cup Snow peas (cut into 1-inch pieces)
  • ¼ cup Coconut aminos (or low-sodium soy sauce)
  • 1 tbsp Honey
  • ¼ tsp Sea salt (to taste)
  • ¼ tsp Black pepper (to taste)
  • 1 tbsp Toasted sesame oil (optional)

Optional garnishes

  • to taste Green onions
  • to taste Sesame seeds

Instructions

  1. Pat the shrimp dry with paper towels.
  2. Heat 1½ tablespoons of olive oil in a large skillet or wok over medium heat.
  3. Add the garlic and ginger, and sauté until fragrant.
  4. Add the shrimp and cook until they start to turn pink, then remove and set aside.
  5. Add the remaining olive oil and increase the heat to medium-high.
  6. Add the vegetables and stir fry until crisp tender.
  7. Whisk together the coconut aminos, honey, sea salt, and black pepper.
  8. Add the shrimp back to the pan along with the sauce, and cook until the shrimp are fully cooked and the sauce has thickened slightly.
  9. Stir in toasted sesame oil and garnish with green onions and sesame seeds if desired.
