Instructions
- Pat the shrimp dry with paper towels.
- Heat 1½ tablespoons of olive oil in a large skillet or wok over medium heat.
- Add the garlic and ginger, and sauté until fragrant.
- Add the shrimp and cook until they start to turn pink, then remove and set aside.
- Add the remaining olive oil and increase the heat to medium-high.
- Add the vegetables and stir fry until crisp tender.
- Whisk together the coconut aminos, honey, sea salt, and black pepper.
- Add the shrimp back to the pan along with the sauce, and cook until the shrimp are fully cooked and the sauce has thickened slightly.
- Stir in toasted sesame oil and garnish with green onions and sesame seeds if desired.
