Ingredients

  • 1 ¼ lbs large shrimp, peeled and deveined
  • 2 ½ cups broccoli florets
  • 2 teaspoons vegetable oil, divided
  • 4 cloves garlic, minced
  • ¼ cup water
  • ¼ cup low sodium soy sauce
  • 3 tablespoons honey
  • 2 teaspoons cornstarch
  • to taste salt and pepper

Instructions

  1. Heat 1 teaspoon of oil in a large pan over medium-high heat.
  2. Add the broccoli and cook for 4-5 minutes until tender, then remove and keep warm.
  3. Wipe the pan clean and turn the heat to high, adding the remaining oil.
  4. Season the shrimp with salt and pepper, then add to the pan and cook until pink and opaque.
  5. Add the minced garlic and cook for 30 seconds.
  6. Return the broccoli to the pan.
  7. In a bowl, whisk together water, honey, and soy sauce.
  8. Mix cornstarch with a tablespoon of cold water in a small bowl.
  9. Pour the soy sauce mixture over the shrimp and vegetables, cooking for 30 seconds.
  10. Add the cornstarch mixture and bring to a boil, cooking until the sauce thickens.
  11. Serve immediately, with rice if desired.
