Ingredients

The stir fry

  • 1 Tbsp olive oil
  • 1 ½ lb medium shrimp, peeled and deveined
  • 1 lb asparagus, trimmed and cut into 1-inch pieces
  • to taste salt and pepper

The sauce

  • ¼ cup reduced sodium soy sauce
  • 1 Tbsp rice vinegar
  • 2 Tbsp honey
  • 4 cloves garlic, minced
  • 2 tsp fresh ginger, minced
  • 1 Tbsp cornstarch

Instructions

  1. Whisk together the soy sauce, rice vinegar, honey, garlic, ginger, and cornstarch in a small bowl to make the sauce.
  2. Heat olive oil in a large skillet over medium-high heat and cook the shrimp until it starts to turn pink, about 3 minutes.
  3. Add the asparagus and season with salt and pepper, cooking until tender, about 2 to 3 more minutes.
  4. Pour in the sauce and cook until it thickens and coats the shrimp and asparagus, about 2 to 3 minutes.
  5. Remove from heat and garnish with sesame seeds and black pepper if desired. Serve immediately.
