Shrimp and Broccoli Stir Fry

Ingredients

The sauce

  • cup chicken broth
  • 2 tbs soy sauce
  • 1 tbs honey
  • 2 tsp tapioca starch

The stir fry

  • 1 tbs peanut oil
  • ½ pound shrimp
  • 2 cups broccoli florets
  • 1 whole red pepper, chopped
  • 1 whole daikon radish, peeled and sliced diagonally
  • 1 bunch scallions, chopped

Instructions

  1. 1. Mix the first four ingredients in a small bowl to create the sauce and set aside.
  2. 2. Heat half of the peanut oil in a wok over medium-high heat and cook the shrimp for about 3 minutes until opaque, then remove them from the wok.
  3. 3. Heat the remaining peanut oil in the wok and add the vegetables, cooking for 2 minutes until crisp-tender, then remove them and set aside.
  4. 4. Add the sauce to the wok and cook for a minute to thicken, stirring constantly.
  5. 5. Return the shrimp and vegetable mixture to the wok, heat through for a minute while stirring to coat with the sauce.
  6. 6. Serve over brown rice.
