hearty whole grain bread, well toasted & rubbed with garlic
Instructions
- Preheat the oven to 350°F.
- In a large bowl, combine olive oil, maple syrup, tamari, smoked paprika, smoked salt, and liquid smoke if using.
- Add coconut and crumbled tempeh to the bowl and toss gently for about a minute.
- Spread the mixture in a single layer on two baking sheets.
- Bake for 15-25 minutes, stirring once or twice, until deeply golden and toasted.
- To assemble the sandwich, spread mayo on the toasted bread.
- Layer with tomatoes, lettuce, coconut bacon, and avocado slices.
- Enjoy the sandwich open-faced or topped with another slice of bread.
