Ingredients

Coconut Bacon

  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup or coconut nectar
  • 1 tablespoon tamari, soy sauce, or coconut aminos
  • 1 ¼ teaspoons smoked paprika
  • scant ½ teaspoon smoked salt
  • a few drops liquid smoke (optional)
  • 2 cups unsweetened large-flake coconut
  • 8 ounces tempeh, crumbled

Sandwich Assembly

  • to taste tomatoes or roasted tomatoes
  • to taste your favorite mayo
  • 1 small head lettuce
  • 1-2 ripe avocados
  • slices hearty whole grain bread, well toasted & rubbed with garlic

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine olive oil, maple syrup, tamari, smoked paprika, smoked salt, and liquid smoke if using.
  3. Add coconut and crumbled tempeh to the bowl and toss gently for about a minute.
  4. Spread the mixture in a single layer on two baking sheets.
  5. Bake for 15-25 minutes, stirring once or twice, until deeply golden and toasted.
  6. To assemble the sandwich, spread mayo on the toasted bread.
  7. Layer with tomatoes, lettuce, coconut bacon, and avocado slices.
  8. Enjoy the sandwich open-faced or topped with another slice of bread.
