Ingredients

Coconut Bacon

  • 1 cup unsweetened coconut flakes
  • 4 teaspoons maple syrup
  • 2 teaspoons liquid smoke
  • ¾ teaspoon sea salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • teaspoon ground black pepper

Sandwich

  • 8 slices sourdough bread
  • 5 tablespoons vegan mayo
  • 8 leaves green leaf lettuce
  • 8 slices large tomato
  • 1 cup sliced peaches
  • ¾ cup Coconut Bacon
  • teaspoon ground black pepper

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine coconut flakes, maple syrup, liquid smoke, salt, onion powder, garlic powder, smoked paprika, and black pepper, mixing until evenly coated.
  3. Spread the mixture in a single layer on the parchment paper.
  4. Bake for 5 minutes, stir, then bake for another 5 minutes until amber brown.
  5. For the sandwich, spread vegan mayo on one side of each slice of bread.
  6. Layer lettuce, tomato, peach slices, coconut bacon, and a pinch of black pepper on half of the slices.
  7. Top with the remaining slices of bread, serve, or wrap for later.
