Instructions
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine coconut flakes, maple syrup, liquid smoke, salt, onion powder, garlic powder, smoked paprika, and black pepper, mixing until evenly coated.
- Spread the mixture in a single layer on the parchment paper.
- Bake for 5 minutes, stir, then bake for another 5 minutes until amber brown.
- For the sandwich, spread vegan mayo on one side of each slice of bread.
- Layer lettuce, tomato, peach slices, coconut bacon, and a pinch of black pepper on half of the slices.
- Top with the remaining slices of bread, serve, or wrap for later.
