Feisty Green Beans

Ingredients

  • 1 lb green beans, thinly sliced
  • ½ cup golden raisins
  • 1 tbsp extra virgin olive oil
  • 2 cloves garlic, thinly sliced
  • ½ medium yellow onion, finely diced
  • 3 leaves bay leaves
  • cup white wine
  • ½ tsp hot paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp curry powder
  • ½ tsp salt
  • scant ½ tsp crushed red pepper flakes
  • 6 oz extra-firm tofu, cut into ½-inch cubes
  • 2 tbsp unsalted butter
  • cup crème fraîche or sour cream
  • ¼ cup sliced almonds, toasted
  • cup finely chopped fresh cilantro
  • to taste salt and pepper

Instructions

  1. Blanch the green beans in boiling water for about a minute, then plunge them into ice-cold water to stop cooking.
  2. Soak the raisins in scalding hot water for five minutes, then drain.
  3. In a large skillet, heat the olive oil over medium heat and add the garlic, onion, and bay leaves. Cook until the onion and garlic start to brown.
  4. Add the white wine to the skillet and cook until mostly evaporated, then remove the bay leaves.
  5. Stir in the spices (paprika, cumin, coriander, curry powder, salt, and red pepper flakes) along with the tofu and raisins, cooking until heated through.
  6. Add the butter and green beans, stirring until the butter melts.
  7. Remove from heat and mix in the crème fraîche, most of the almonds, and most of the cilantro. Adjust seasoning with salt and pepper.
  8. Serve topped with remaining almonds and cilantro.
