Feisty Green Beans

Instructions
- Blanch the green beans in boiling water for about a minute, then plunge them into ice-cold water to stop cooking.
- Soak the raisins in scalding hot water for five minutes, then drain.
- In a large skillet, heat the olive oil over medium heat and add the garlic, onion, and bay leaves. Cook until the onion and garlic start to brown.
- Add the white wine to the skillet and cook until mostly evaporated, then remove the bay leaves.
- Stir in the spices (paprika, cumin, coriander, curry powder, salt, and red pepper flakes) along with the tofu and raisins, cooking until heated through.
- Add the butter and green beans, stirring until the butter melts.
- Remove from heat and mix in the crème fraîche, most of the almonds, and most of the cilantro. Adjust seasoning with salt and pepper.
- Serve topped with remaining almonds and cilantro.
