Instructions

  1. Drain excess moisture from the tofu and cut it into cubes.
  2. Sear the tofu in a skillet until a crust forms, then set aside.
  3. Prepare the vegetables and have all ingredients ready.
  4. Dry fry the green beans in a hot pan until blistered but still crisp.
  5. Add oil, ginger, lemongrass, curry paste, and garlic to the pan, stirring until fragrant.
  6. Mix in the shallots and stir fry until they wilt, then add the tofu, soy sauce, and rice vinegar.
  7. Finish by adding fresh tomatoes and serve with optional garnishes.
