Instructions
- Drain excess moisture from the tofu and cut it into cubes.
- Sear the tofu in a skillet until a crust forms, then set aside.
- Prepare the vegetables and have all ingredients ready.
- Dry fry the green beans in a hot pan until blistered but still crisp.
- Add oil, ginger, lemongrass, curry paste, and garlic to the pan, stirring until fragrant.
- Mix in the shallots and stir fry until they wilt, then add the tofu, soy sauce, and rice vinegar.
- Finish by adding fresh tomatoes and serve with optional garnishes.
