Ingredients

Spicy Peanut Sauce

  • ½ cup natural peanut butter
  • ½ cup water
  • 1 clove garlic
  • 2 inches ginger
  • 2 tablespoons Tamari
  • 2 tablespoons maple syrup
  • 1 tablespoon lime juice
  • 1 tablespoon unseasoned rice vinegar
  • 1-2 tablespoons Sambal Oelek (or other hot sauce)
  • to taste sea salt and ground black pepper

Crispy Tofu & Green Beans

  • 1 lb firm or extra firm tofu
  • 3 ½ tablespoons avocado oil
  • to taste sea salt and ground black pepper
  • 2 tablespoons arrowroot starch
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • ¾ lb green beans
  • 2 green onions sliced
  • for serving cup warm cooked rice
  • for serving chili crisp (optional)

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Blend peanut sauce ingredients until smooth and set aside.
  3. Tear tofu into pieces, blot dry, and toss with oil, salt, pepper, arrowroot, garlic powder, and onion powder.
  4. Spread tofu on the baking sheet and bake for 15 minutes.
  5. Toss green beans with remaining oil, garlic powder, onion powder, salt, and pepper.
  6. After 15 minutes, stir tofu and add green beans to the baking sheet, then bake for another 15 minutes.
  7. Broil for a minute if desired, then serve with rice, green onions, chili crisp, and peanut sauce.
