Shaved Brussels Sprouts, Quinoa and Apple Salad

Ingredients

Sweet Orange Vinaigrette

  • 2 tablespoons apple cider vinegar
  • 3 tablespoons freshly squeezed orange juice
  • ½ tablespoon orange zest (optional)
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 2 ½ tablespoons extra virgin olive oil
  • 1 teaspoon dijon mustard
  • 1 tablespoon raw cane sugar or coconut sugar

Shaved Brussels Sprouts Salad

  • 16 oz brussels sprouts, shaved
  • 1 unit Gala apple, cored and chopped
  • 1 cup cooked quinoa
  • cup dried cranberries
  • cup chopped walnuts (toasted if preferred)
  • to taste unit salt & pepper

Instructions

  1. Prepare the vinaigrette by combining all the ingredients in a jar and shaking until well mixed.
  2. Wash and dry the Brussels sprouts, removing any outer leaves and tough ends, then shred them.
  3. Pour half of the vinaigrette over the shredded Brussels sprouts and mix well, letting it sit for about 5 minutes.
  4. Add the remaining salad ingredients to the Brussels sprouts, season with salt and pepper, and add the rest of the vinaigrette.
  5. Toss everything to combine and let the salad marinate in the fridge for at least 30 minutes before serving.
