Raspberry Cocktails with Rosemary

Ingredients

Raspberry-Rosemary Syrup (Makes Enough for 6–8 Cocktails)

  • 1 tablespoon rosemary needles
  • 1 ½ cups frozen raspberries, defrosted
  • 2 tablespoons juice of lemon
  • 5 tablespoons sugar
  • ¾ cup water
  • 1 tablespoon cornstarch

Cocktail (Makes Enough for 1 Cocktail)

  • 1 ½ ounces vodka or gin
  • ½ ounce St. Germaine elderflower liqueur
  • 1 ½ ounces raspberry-rosemary syrup
  • 1 tablespoon soda water
  • 1 tablespoon champagne
  • to taste optional ice
  • to taste optional rosemary sprigs
  • to taste optional raspberries

Instructions

  1. Muddle rosemary needles in a small bowl to release oils.
  2. In a saucepan, combine muddled rosemary, frozen raspberries, lemon juice, sugar, water, and cornstarch.
  3. Bring the mixture to a boil, then reduce heat and mash raspberries while simmering for 10 minutes.
  4. Remove from heat and let the syrup cool completely, then strain to remove solids.
  5. In a cocktail shaker, combine vodka or gin, elderflower liqueur, raspberry-rosemary syrup, and ice.
  6. Shake well and strain into a glass, adding soda water and champagne on top.
  7. Garnish with rosemary sprigs and raspberries if desired, then serve immediately.
