Raspberry Cocktails with Rosemary

Instructions
- Muddle rosemary needles in a small bowl to release oils.
- In a saucepan, combine muddled rosemary, frozen raspberries, lemon juice, sugar, water, and cornstarch.
- Bring the mixture to a boil, then reduce heat and mash raspberries while simmering for 10 minutes.
- Remove from heat and let the syrup cool completely, then strain to remove solids.
- In a cocktail shaker, combine vodka or gin, elderflower liqueur, raspberry-rosemary syrup, and ice.
- Shake well and strain into a glass, adding soda water and champagne on top.
- Garnish with rosemary sprigs and raspberries if desired, then serve immediately.
