Ingredients

  • 2 ½ cups parsley, stemmed and washed
  • cup toasted walnuts or pine nuts
  • cup grated parmesan cheese, vegan
  • 2 cloves garlic
  • ½ teaspoon coarse salt
  • cup olive oil
  • ½ teaspoon pepper, adjust to taste

Instructions

  1. Combine parsley, nuts, parmesan cheese, garlic, coarse salt, and two tablespoons of olive oil in a food processor.
  2. Blend the ingredients in 5-second intervals until mixed, about 30 seconds, then scrape down the bowl.
  3. Add the remaining olive oil and season with salt and pepper, blending until smooth but with some texture, about 1 minute.
  4. Scrape down the bowl again to ensure everything is mixed well.
  5. Adjust seasoning or add more cheese or olive oil if desired.
  6. Serve the pesto on crackers, bread, sandwiches, pizza, or other dishes.
