Parsley Pesto

Instructions
- Combine parsley, nuts, parmesan cheese, garlic, coarse salt, and two tablespoons of olive oil in a food processor.
- Blend the ingredients in 5-second intervals until mixed, about 30 seconds, then scrape down the bowl.
- Add the remaining olive oil and season with salt and pepper, blending until smooth but with some texture, about 1 minute.
- Scrape down the bowl again to ensure everything is mixed well.
- Adjust seasoning or add more cheese or olive oil if desired.
- Serve the pesto on crackers, bread, sandwiches, pizza, or other dishes.
