Ingredients

The scallops

  • 1 pound large sea scallops

The topping

  • ¼ cup panko crumbs
  • tablespoons grated Parmesan cheese
  • 1 tablespoon fresh minced parsley
  • ¼ teaspoon dried oregano
  • ¼ teaspoon kosher salt
  • to taste fresh black pepper

The sauce

  • Juice of 1 lemon
  • tablespoons melted unsalted butter
  • 1 tablespoon white wine

For preparation

  • as needed olive oil spray

Instructions

  1. Preheat the oven to 400°F and spray a baking dish with olive oil.
  2. Pat the scallops dry and season with salt.
  3. Combine panko, Parmesan, parsley, oregano, salt, and pepper in a bowl.
  4. Arrange scallops in the dish and top with the panko mixture.
  5. Whisk together half of the lemon juice, melted butter, and white wine, then pour over the scallops.
  6. Bake for 15 minutes until scallops are opaque.
  7. Broil for 2-3 minutes until the topping is golden.
  8. Squeeze the remaining lemon juice over the scallops and serve immediately.
