Instructions
- Preheat the oven to 400°F and spray a baking dish with olive oil.
- Pat the scallops dry and season with salt.
- Combine panko, Parmesan, parsley, oregano, salt, and pepper in a bowl.
- Arrange scallops in the dish and top with the panko mixture.
- Whisk together half of the lemon juice, melted butter, and white wine, then pour over the scallops.
- Bake for 15 minutes until scallops are opaque.
- Broil for 2-3 minutes until the topping is golden.
- Squeeze the remaining lemon juice over the scallops and serve immediately.
