Salted Double Chocolate Muffins

Ingredients

The muffins

  • 1 scant cup flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • pinch salt
  • 1 tablespoon cocoa powder
  • cup sugar
  • ½ cup milk
  • 2 tablespoons strong coffee
  • tablespoons vegetable oil
  • 1 egg
  • ½ teaspoon vanilla
  • ½ cup chocolate chips

The glaze

  • ½ cup powdered sugar
  • 1 tablespoon cocoa powder
  • 1 tablespoon milk
  • to taste sea salt

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, mix the flour, baking powder, baking soda, salt, cocoa powder, and sugar.
  3. Add the milk, coffee, vegetable oil, egg, and vanilla to the dry ingredients and mix until just combined. Fold in the chocolate chips.
  4. Spoon the batter into a prepared muffin tin, filling each cup about ¾ full. Top with extra chocolate chips and bake for 15 minutes.
  5. To make the glaze, whisk together powdered sugar, cocoa powder, and milk until smooth. Adjust consistency as needed.
  6. Once the muffins are cool, drizzle with the glaze and sprinkle with coarse sea salt.
