Crepes with Yogurt and Berries

The filling

plain nonfat Greek yogurt

honey

vanilla extract

Instructions
- Whisk together the egg, milk, flour, oil, and salt until combined.
- Heat an 8-inch skillet over medium heat and lightly mist with cooking spray.
- Pour 1/8 cup of the batter into the skillet, tilting to coat the bottom.
- Cook until the underside is golden, about a minute, then flip and cook for another 15-30 seconds.
- Transfer the cooked crepe to a wire rack and repeat with the remaining batter to make 8 crepes.
- In a bowl, mix the yogurt, honey, and vanilla until well combined.
- Spread a tablespoon of the yogurt mixture on half of each crepe and top with ¼ cup of berries.
- Fold the crepe over the filling and repeat with remaining crepes.
