Ingredients

The crepes

  • 1 large egg
  • ¾ cup skim milk
  • ½ cup all-purpose flour
  • 1 tablespoon olive oil
  • teaspoon salt

The filling

  • ½ cup plain nonfat Greek yogurt
  • 1 teaspoon honey
  • ½ teaspoon vanilla extract
  • 2 cups fresh berries

Instructions

  1. Whisk together the egg, milk, flour, oil, and salt until combined.
  2. Heat an 8-inch skillet over medium heat and lightly mist with cooking spray.
  3. Pour 1/8 cup of the batter into the skillet, tilting to coat the bottom.
  4. Cook until the underside is golden, about a minute, then flip and cook for another 15-30 seconds.
  5. Transfer the cooked crepe to a wire rack and repeat with the remaining batter to make 8 crepes.
  6. In a bowl, mix the yogurt, honey, and vanilla until well combined.
  7. Spread a tablespoon of the yogurt mixture on half of each crepe and top with ¼ cup of berries.
  8. Fold the crepe over the filling and repeat with remaining crepes.
