Strawberry Crepes

Ingredients

The crepes

  • 4 large eggs
  • 1 cup powdered sugar
  • 1 cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • ½ teaspoon vanilla extract
  • 4 teaspoons butter

The filling

  • ½ cup strawberry glaze
  • 1 pound strawberries
  • to taste whipped cream

Instructions

  1. Whisk the eggs in a medium bowl until beaten, then add powdered sugar and whisk until smooth.
  2. Add flour and whisk until smooth, then add milk and vanilla, whisking vigorously until completely smooth.
  3. In a skillet over medium heat, melt ½ teaspoon of butter.
  4. Add ½ cup of batter to the skillet and tilt to distribute evenly.
  5. Cook until set and lightly browned on one side, about 1 minute 15 seconds, then flip and cook until browned on the second side, about 45 seconds.
  6. In a small bowl, combine strawberry glaze with hulled and sliced strawberries, stirring until coated.
  7. Fill the crepes with the glazed strawberries and whipped cream, then roll or fold them.
  8. Serve with additional strawberries, whipped cream, and powdered sugar.
