Instructions
- Whisk the eggs in a large bowl.
- Add milk to the bowl and combine.
- Sift in the flour, sugar, and salt.
- Add melted butter and mix together.
- Strain the mixture and refrigerate for at least one hour.
- After one hour, heat a frying pan or crepe skillet over low to medium heat.
- Pour 1 ladle (about ⅓ cup) of the mixture and spread thinly to make crepes.
- When bubbles appear, turn it over and fry briefly until golden brown.
- Repeat until all the mixture is used, placing crepes on parchment paper to cool.
- Prepare toppings by cutting fruit and whipping cream with sugar until soft peaks form.
- Spread whipped cream on one crepe, add fruit, and stack with more crepes and cream.
- Cover with plastic wrap and refrigerate for at least an hour.
- Top with more fruit to serve.
