Mille Crepe

Ingredients

Crepe Batter

  • 3 large eggs eggs
  • 375 ml milk
  • 150 g plain flour
  • 2 tbs sugar
  • a pinch salt
  • 30 g unsalted butter (melted)

Filling

  • 250 ml fresh cream
  • 20 g sugar
  • 1 punnet strawberries
  • 2 kiwis
  • 1 banana

Instructions

  1. Whisk the eggs in a large bowl.
  2. Add milk to the bowl and combine.
  3. Sift in the flour, sugar, and salt.
  4. Add melted butter and mix together.
  5. Strain the mixture and refrigerate for at least one hour.
  6. After one hour, heat a frying pan or crepe skillet over low to medium heat.
  7. Pour 1 ladle (about ⅓ cup) of the mixture and spread thinly to make crepes.
  8. When bubbles appear, turn it over and fry briefly until golden brown.
  9. Repeat until all the mixture is used, placing crepes on parchment paper to cool.
  10. Prepare toppings by cutting fruit and whipping cream with sugar until soft peaks form.
  11. Spread whipped cream on one crepe, add fruit, and stack with more crepes and cream.
  12. Cover with plastic wrap and refrigerate for at least an hour.
  13. Top with more fruit to serve.
