Easy Crepes

Ingredients

The batter

  • 4 large eggs
  • 2⅓ cups whole milk
  • cup sugar
  • 1 teaspoon vanilla extract
  • 2⅓ cups all-purpose flour
  • ½ teaspoon kosher salt
  • 4 tablespoons unsalted butter, melted

For serving

  • to taste Suzette Sauce
  • to taste Milk Chocolate Sauce
  • to taste whipped cream
  • to taste powdered sugar
  • to taste jam

Instructions

  1. Blend eggs, milk, sugar, and vanilla until smooth. Add flour and salt, blend to combine, then chill the batter for at least 1 hour.
  2. Heat a nonstick skillet over medium-high heat and brush with melted butter. Pour about ¼ cup of batter into the skillet, swirling to coat evenly. Cook until bubbles form and edges are golden, then flip and cook for another 15 seconds.
  3. Transfer the cooked crepe to a plate and tent with foil to keep warm. Repeat with remaining batter and butter.
  4. Serve crepes with your choice of Suzette Sauce, Milk Chocolate Sauce, whipped cream, and/or jam.
