Instructions
- Blend eggs, milk, vanilla, sugar, salt, water, flour, and melted butter in a blender or mix by hand with a whisk.
- Let the batter rest in the refrigerator for at least 1 hour or overnight.
- Heat a skillet over medium-high heat and lightly coat it with oil or cooking spray.
- Pour about ⅓ cup of batter into the skillet and tilt to spread it evenly.
- Cook for about 1½ minutes until the bottom is light brown, then flip and cook the other side.
- Serve warm with your choice of fillings and toppings.
