Ingredients

The batter

  • 3 Tablespoons unsalted butter
  • 1 cup all-purpose flour
  • 1 Tablespoon granulated sugar
  • teaspoon salt
  • ¾ cup whole milk
  • ½ cup water
  • 2 large eggs
  • teaspoons pure vanilla extract

For cooking

  • 3-4 Tablespoons unsalted butter

Instructions

  1. Melt 3 Tablespoons of butter and let it cool.
  2. Combine the cooled melted butter with flour, sugar, salt, milk, water, eggs, and vanilla in a blender and blend until smooth.
  3. Chill the batter in the refrigerator for 30-60 minutes.
  4. Grease an 8-inch skillet with butter and heat it over medium heat.
  5. Pour 3-4 Tablespoons of batter into the skillet and tilt to spread it thinly.
  6. Cook for 1-2 minutes until the bottom is set, then flip and cook for another 30 seconds.
  7. Transfer the cooked crepe to a plate and repeat with the remaining batter, buttering the pan between each crepe.
  8. Fill the crepes with your choice of fillings and serve.
