Instructions
- Blend the milk, flour, sugar, salt, melted butter, vanilla, and eggs in a blender until well combined.
- Scrape the sides of the blender if necessary and blend a few seconds longer.
- Cover the batter and chill for 1 hour (or overnight if desired).
- Heat a 10-inch non-stick skillet over medium heat.
- Gently stir the batter to blend any separated layers.
- Lightly butter the skillet, then pour a scant ¼ cup of batter into the pan, tilting and swirling to coat the bottom.
- Cook until the bottom is golden brown, then flip and cook the other side until golden brown spots appear.
- Transfer the cooked crepe to a wire rack and repeat the process with the remaining batter.
- Dust the crepes with powdered sugar and fill or fold as desired.
