Ingredients

The batter

  • cups milk
  • 1 cup all-purpose flour
  • 2 tsp granulated sugar
  • ¼ tsp salt
  • 3 Tbsp unsalted butter, melted
  • ½ tsp vanilla extract
  • 3 large eggs

For cooking

  • Butter for pan
  • Powdered sugar for dusting
  • Desired fillings optional

Instructions

  1. Blend the milk, flour, sugar, salt, melted butter, vanilla, and eggs in a blender until well combined.
  2. Scrape the sides of the blender if necessary and blend a few seconds longer.
  3. Cover the batter and chill for 1 hour (or overnight if desired).
  4. Heat a 10-inch non-stick skillet over medium heat.
  5. Gently stir the batter to blend any separated layers.
  6. Lightly butter the skillet, then pour a scant ¼ cup of batter into the pan, tilting and swirling to coat the bottom.
  7. Cook until the bottom is golden brown, then flip and cook the other side until golden brown spots appear.
  8. Transfer the cooked crepe to a wire rack and repeat the process with the remaining batter.
  9. Dust the crepes with powdered sugar and fill or fold as desired.
