Ingredients

The batter

  • 4 large eggs
  • 1 cup powdered sugar
  • 1 ⅙ cups all-purpose flour
  • 2 cups milk
  • ½ teaspoon vanilla extract
  • 4 teaspoons butter

For serving

  • to taste fresh berries
  • to taste whipped cream

Instructions

  1. Whisk eggs until beaten, then whisk in powdered sugar until smooth.
  2. Add flour and whisk until smooth.
  3. Add milk and vanilla, and whisk vigorously until completely smooth.
  4. In a skillet over medium heat, melt ½ teaspoon butter.
  5. Pour ½ cup batter in the center of the pan and tilt to distribute evenly.
  6. Cook until set and lightly browned on one side, about 1 minute 15 seconds.
  7. Flip and cook until browned on the second side, about 45 seconds.
  8. Remove from heat and stack on a plate to keep warm.
  9. Fold or roll crepes and serve with fresh berries and whipped cream if desired.
