Ingredients

  • ½ Cup Light Canned Coconut Milk
  • 1 whole Lime
  • 4 Ounces Ginger Beer
  • 4 Ounces Sparkling Seltzer or Sparkling Water
  • 20 leaves Mint Leaves
  • to taste Sea Salt for rimming the glass

Instructions

  1. Prepare the sea salt by pouring it into a small dish.
  2. Cut the lime into slices and rub one slice along the rim of a tall glass.
  3. Dip the glass rim into the sea salt to coat it and set aside.
  4. Divide the mint leaves between the glasses and muddle them to release their aroma.
  5. Add the coconut milk, lime juice, ginger beer, and sparkling seltzer to the glasses.
  6. Stir the mixture until well combined and serve immediately.
