One-pot Orange Honey Garlic Roasted Chicken

Ingredients

Marinade

  • 2 whole oranges
  • 1 tsp dried thyme or 1 Tablespoon fresh thyme leaves
  • ¼ cup light olive oil
  • ⅛ to ¼ cup honey
  • 1 Tbsp lemon juice
  • 1 ½ tsp minced garlic
  • ½ tsp onion powder
  • ½ tsp Kosher salt
  • ½ tsp black pepper

For the Pot

  • 3 to 3.5 pounds whole young chicken
  • 3 sprigs fresh thyme
  • ½ whole onion or 1 large shallot
  • optional Fresh thyme and orange slices for garnish

Instructions

  1. 1. Preheat the oven to 400°F (200°C). Pat the chicken dry with paper towels.
  2. 2. Rub olive oil, honey, salt, and pepper all over the chicken, including under the skin.
  3. 3. Combine orange juice, minced garlic, balsamic vinegar, and honey to make the glaze.
  4. 4. Stuff the chicken cavity with orange wedges, garlic cloves, and fresh herbs. Pour the glaze over the chicken.
  5. 5. Place the chicken in a Dutch oven or roasting pan, cover, and roast for 30 minutes.
  6. 6. Remove the cover, baste the chicken, and continue roasting uncovered for another 45-50 minutes until the internal temperature reaches 165°F.
  7. 7. For crispy skin, broil for the last 2-3 minutes. Let the chicken rest for 10-15 minutes before carving.
