Ingredients

The ribs

  • 2 slabs ribs

The rub and marinade

  • ¼ cup Neely's BBQ rub
  • 1 cup paprika
  • ½ cup sugar
  • 2 teaspoons onion powder
  • 2 tablespoons mustard
  • 1 tablespoon olive oil

The wood chips

  • 4 cups wood chips (2 parts hickory, 1 part cherry)

Instructions

  1. Remove the outer membrane from the ribs and slather with mustard, then apply the rub generously on both sides.
  2. Let the ribs marinate in the fridge for a few hours.
  3. Soak the wood chips in water for 30 minutes.
  4. Start the grill and add the soaked wood chips once it begins to heat up.
  5. Regulate the grill temperature to reach 250 degrees.
  6. Place the ribs on the grill and maintain the temperature at 250 degrees for 3-4 hours or until the internal temperature reaches 165 degrees.
  7. Optionally, add BBQ sauce during the last 20 minutes for a glazed finish.
