Pork Ribs on the Big Green Egg

The wood chips

wood chips (2 parts hickory, 1 part cherry)
Instructions
- Remove the outer membrane from the ribs and slather with mustard, then apply the rub generously on both sides.
- Let the ribs marinate in the fridge for a few hours.
- Soak the wood chips in water for 30 minutes.
- Start the grill and add the soaked wood chips once it begins to heat up.
- Regulate the grill temperature to reach 250 degrees.
- Place the ribs on the grill and maintain the temperature at 250 degrees for 3-4 hours or until the internal temperature reaches 165 degrees.
- Optionally, add BBQ sauce during the last 20 minutes for a glazed finish.
