Ingredients

The crust

  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • 1 cup all-purpose flour

The filling

  • ¾ cup raspberry preserves
  • 12–16 pieces fresh raspberries

The streusel

  • ½ cup old-fashioned whole rolled oats
  • cup packed light or dark brown sugar
  • ¼ teaspoon ground cinnamon
  • ¼ cup all-purpose flour
  • ¼ cup unsalted butter, cold and cubed

Optional topping

  • to taste vanilla icing

Instructions

  1. Preheat the oven to 300°F (149°C) and prepare an 8-inch square baking pan with parchment paper.
  2. Mix melted butter, sugar, vanilla, and salt for the crust, then add flour and press into the pan. Bake for 15 minutes.
  3. Increase oven temperature to 350°F (177°C), spread raspberry preserves over the crust, and dot with fresh raspberries.
  4. For the streusel, whisk oats, brown sugar, cinnamon, and flour, then cut in cold butter until crumbly. Sprinkle over the filling.
  5. Bake for 30-35 minutes until streusel is golden and filling is bubbling. Cool for at least 20 minutes, then refrigerate for 2 hours.
  6. Lift out of the pan, cut into bars, and drizzle with icing if desired.
