Raspberry Streusel Bars

Instructions
- Preheat the oven to 300°F (149°C) and prepare an 8-inch square baking pan with parchment paper.
- Mix melted butter, sugar, vanilla, and salt for the crust, then add flour and press into the pan. Bake for 15 minutes.
- Increase oven temperature to 350°F (177°C), spread raspberry preserves over the crust, and dot with fresh raspberries.
- For the streusel, whisk oats, brown sugar, cinnamon, and flour, then cut in cold butter until crumbly. Sprinkle over the filling.
- Bake for 30-35 minutes until streusel is golden and filling is bubbling. Cool for at least 20 minutes, then refrigerate for 2 hours.
- Lift out of the pan, cut into bars, and drizzle with icing if desired.
