Ingredients

The base and topping

  • 1 cup all-purpose flour
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 cup rolled oats (old fashioned)
  • ½ cup packed light-brown sugar
  • ½ cup unsalted butter, softened

The filling

  • ¾ cup raspberry jam

Instructions

  1. Preheat the oven to 350°F and line an 8x8-inch baking dish with aluminum foil, leaving a 2-inch overhang.
  2. In a large mixing bowl, whisk together the flour, baking soda, and salt.
  3. Stir in the oats and brown sugar, breaking up any clumps of brown sugar.
  4. Add the softened butter and work it into the mixture until evenly moistened.
  5. Press 2 cups of the oat mixture into the prepared baking dish to form an even layer.
  6. Spread the raspberry jam over the oat layer, leaving a ¼-inch border around the edges.
  7. Sprinkle the remaining oat mixture on top of the jam and press it slightly into the jam layer.
  8. Bake in the preheated oven for about 34-38 minutes until golden brown.
  9. Allow to cool completely before cutting into squares.
