Instructions
- Preheat the oven to 350°F and line an 8x8-inch baking dish with aluminum foil, leaving a 2-inch overhang.
- In a large mixing bowl, whisk together the flour, baking soda, and salt.
- Stir in the oats and brown sugar, breaking up any clumps of brown sugar.
- Add the softened butter and work it into the mixture until evenly moistened.
- Press 2 cups of the oat mixture into the prepared baking dish to form an even layer.
- Spread the raspberry jam over the oat layer, leaving a ¼-inch border around the edges.
- Sprinkle the remaining oat mixture on top of the jam and press it slightly into the jam layer.
- Bake in the preheated oven for about 34-38 minutes until golden brown.
- Allow to cool completely before cutting into squares.
