Mushroom and Mozzarella Stuffed Chicken

Ingredients

The filling

  • 1 lb sliced white mushrooms
  • 2 tablespoons light butter
  • 2 cloves garlic, minced
  • 1 oz Parmesan cheese, finely shredded
  • 4 oz shredded 2% milk Mozzarella cheese
  • 1 tablespoon fresh chopped parsley

The chicken

  • 4 pieces boneless, skinless chicken breasts (6 oz each)

The seasoning

  • ¾ teaspoon salt, divided
  • ½ teaspoon black pepper, divided
  • ½ teaspoon dried thyme, divided
  • ¼ teaspoon garlic powder

The cooking oil

  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Melt the butter in a skillet over medium-high heat, then add the mushrooms and cook for about 5 minutes.
  3. Add salt, pepper, thyme, parsley, and garlic to the mushrooms, cooking for another 30-60 seconds until fragrant.
  4. Slice each chicken breast almost all the way through to create a pocket.
  5. Mix the remaining salt, pepper, thyme, and garlic powder, then season both sides of the chicken breasts.
  6. Stuff each chicken breast with Parmesan and Mozzarella cheeses, then top with sautéed mushrooms.
  7. Close the chicken breasts and press down to secure the filling.
  8. Heat olive oil in a skillet over medium-high heat and sear the chicken for about 1 minute on each side until golden.
  9. Transfer the chicken to the prepared baking sheet and bake for 20-24 minutes until fully cooked.
