Pepperoni Stuffed Chicken

Instructions
- Trim excess fat from the chicken breasts and slice each breast in half diagonally.
- Create a pocket in each piece of chicken without cutting all the way through.
- Stuff each piece with mozzarella cheese and pepperoni, and season with salt and pepper.
- Preheat the oven to 350°F and prepare a baking sheet with aluminum foil.
- Heat vegetable oil in a skillet over medium/high heat.
- Prepare three shallow dishes with flour, beaten egg, and breadcrumbs.
- Coat each stuffed chicken piece in flour, then egg, and finally breadcrumbs.
- Test the oil's heat with a pinch of breadcrumbs; it should sizzle.
- Fry the chicken pieces until golden brown on each side, about 2-3 minutes.
- Transfer the chicken to the baking sheet and bake for about 25 minutes until cooked through.
