Instructions
- Preheat the oven to 400 degrees.
- Cut a pocket into one side of each chicken breast without cutting all the way through.
- Stuff each pocket with 5 slices of pepperoni, 1-2 tablespoons of sliced peppers, and 1-2 slices of mozzarella cheese, reserving 4 slices of cheese for later.
- Use toothpicks to close up the pockets.
- Heat olive oil in an oven-safe pan over medium-high heat and season the chicken with Italian seasoning, salt, and pepper.
- Sear the chicken on both sides until golden brown, about 4-5 minutes per side.
- Pour marinara sauce over the seared chicken and top each piece with a slice of mozzarella cheese.
- Bake for 20 minutes or until the chicken is cooked through and the cheese is melted.
- Sprinkle with parsley and serve.
