Maple Balsamic Chicken and Sweet Potatoes Sheet Pan Meal

Ingredients

The chicken and vegetables

  • lbs. boneless skinless chicken tenders
  • 10.7 oz. spiralized sweet potatoes
  • lbs. green beans
  • ½ cup cherry tomatoes
  • Tbsp avocado oil
  • ½ tsp cinnamon

The marinade

  • ¼ cup pure maple syrup
  • ¼ cup balsamic vinegar
  • 3 Tbsp dijon mustard
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp avocado oil
  • 2 Tbsp minced garlic
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • ½ tsp salt
  • ¾ tsp ground black pepper

Instructions

  1. Mix all marinade ingredients together.
  2. Pound chicken to about ½ inch thickness if necessary.
  3. Marinate chicken in a resealable bag or glass dish for at least 6 hours or overnight.
  4. Preheat oven to 400°F and line a baking sheet with foil, coating with oil.
  5. Toss sweet potatoes in ½ Tbsp avocado oil and place on the baking sheet, sprinkling cinnamon on top.
  6. Place marinated chicken on top of the sweet potatoes.
  7. Toss green beans in 1 Tbsp avocado oil, season with salt and pepper, and spread around the chicken and sweet potatoes.
  8. Add cherry tomatoes on top of the chicken.
  9. Bake for about 22-25 minutes until chicken reaches 160°F.
