Maple Balsamic Glazed Chicken

Ingredients

The chicken

  • 10-12 pieces boneless skinless chicken thighs

The marinade/glaze

  • 2 tbsp healthy cooking fat or oil
  • 2 pieces shallots, minced
  • 2 large cloves garlic, minced
  • 1 tbsp fresh thyme, finely chopped
  • 1 tbsp fresh rosemary, finely chopped
  • ½ cup pure maple syrup
  • ¼ cup balsamic vinegar
  • 3 tbsp Dijon mustard
  • 2 tbsp fresh lime juice
  • 2 tbsp extra-virgin olive oil
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ½ tsp cayenne pepper
  • 3-4 pieces birds eye chili peppers, crushed (optional)

Instructions

  1. Combine all marinade ingredients in a bowl and whisk until well mixed.
  2. Place chicken in a baking dish and pour marinade over it, ensuring all pieces are coated.
  3. Cover and refrigerate to marinate for at least 6 hours, preferably overnight.
  4. Heat oil in a skillet over medium-high heat.
  5. Remove chicken from marinade and sear in the skillet until golden brown on one side, about 4-5 minutes.
  6. Flip chicken and cook for another 2 minutes.
  7. Pour marinade over chicken and simmer uncovered for about 10 minutes, spooning marinade over chicken regularly.
  8. Once sauce thickens and darkens, remove from heat and let chicken rest for 3-5 minutes before serving.
