Balsamic Honey Mustard Chicken

Ingredients

The chicken

  • 1 ½ lbs organic boneless skinless chicken thighs

The marinade

  • cup Dijon mustard
  • cup balsamic vinegar
  • 2 tbsp honey
  • 2 tbsp avocado oil
  • 1 sprig rosemary, chopped finely

Instructions

  1. 1. Prepare the marinade by mixing all marinade ingredients together.
  2. 2. Combine the marinade and chicken in a zip-top bag and shake to coat. Refrigerate for 1 hour to 24 hours, or cook immediately if short on time.
  3. 3. Heat a large skillet over medium heat.
  4. 4. Remove the chicken from the marinade and cook in the skillet, reserving the leftover marinade.
  5. 5. While the chicken is cooking, heat the reserved marinade in a small pot until it reaches at least 165 degrees.
  6. 6. Cook the chicken for 6-7 minutes on each side until cooked through.
  7. 7. Transfer the chicken to a plate and top with the heated marinade. Enjoy!
