Ingredients

The chicken

  • 4 pieces boneless, skinless chicken breasts

The marinade

  • ¼ cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • a pinch cayenne pepper

Instructions

  1. 1. Whisk together balsamic vinegar, olive oil, maple syrup, Dijon mustard, garlic, thyme, salt, pepper, and cayenne pepper in a bowl to make the marinade.
  2. 2. Place the chicken in a shallow dish or sealable plastic bag and pour most of the marinade over it, reserving some for later.
  3. 3. Marinate the chicken in the fridge for at least 1 hour or up to 12 hours.
  4. 4. Preheat the grill or grill pan on medium heat and brush with oil.
  5. 5. Remove the chicken from the marinade, shake off excess, and discard the leftover marinade.
  6. 6. Grill the chicken for 5 to 6 minutes on each side or until cooked through (internal temperature of 165°F).
  7. 7. Let the chicken rest for 5 minutes before serving.
