Ingredients

The rice

  • 1 cup uncooked white rice
  • 2 cups water
  • 3 Tbsp rice wine vinegar
  • 2 Tbsp sugar
  • ½ tsp salt

The fillings

  • 1 cup chopped veggies (carrot, cucumber, red pepper, avocado)
  • 4 sheets nori (dried seaweed)

For serving

  • to taste soy sauce/tamari, pickled ginger, wasabi (optional)

Instructions

  1. Prepare the rice by rinsing it until the water runs clear, then boil with water until absorbed.
  2. In a separate pan, heat vinegar, sugar, and salt until dissolved, then cool it.
  3. Mix the cooled vinegar mixture into the cooked rice gently.
  4. Chop your chosen veggies into thin pieces.
  5. On a towel, place plastic wrap and a sheet of nori, then spread a thin layer of rice over the nori.
  6. Add veggies in a line at the bottom of the rice layer.
  7. Roll the nori and rice over the veggies, using the towel to help mold it tightly.
  8. Slice the roll with a sharp knife and serve with optional condiments.
