Hemp Dark Chocolate Energy Bites

Ingredients

The base

  • 1 cup packed pitted dates
  • 2 cups raw walnuts

The flavorings

  • 6 Tbsp cacao powder or unsweetened cocoa powder
  • 3 Tbsp hemp seeds
  • ΒΌ tsp sea salt
  • 3 Tbsp creamy almond butter
  • 1 Tbsp melted coconut oil (optional)

Instructions

  1. Pulse the dates in a food processor until small bits remain or a ball forms, then set aside.
  2. Pulse the walnuts in the food processor until they form a fine meal.
  3. Add the cacao powder, hemp seeds, and sea salt to the walnuts and pulse to combine.
  4. Return the dates to the processor along with the almond butter and melted coconut oil, mixing until a moist dough forms.
  5. Refrigerate the mixture for 10 minutes.
  6. Scoop rounded tablespoon amounts and roll them into balls, using your hands to shape them gently.
  7. Roll the balls in extra hemp seeds or cacao powder if desired.
  8. Store leftovers in a sealed container in the refrigerator for up to 1 week or in the freezer for up to 1 month.
