Dark Chocolate Chewy Energy Bites

Instructions
- Combine the chocolate, apricots, and almonds in the blender.
- Blend until a batter is formed.
- Add a pinch of salt and blend again.
- Remove the mixture from the blender and place it in a bowl.
- Roll the mixture into bite-sized balls, about 18 grams each.
- Coat each ball in cocoa powder.
- Place the coated balls on a baking dish lined with parchment paper.
- Continue rolling and coating until you have around 18-20 bites.
- Sprinkle a little sea salt over each bite if desired.
- Freeze for 30 minutes to set.
- Store in a ziplock or sealed container in the fridge for up to 8 weeks.
