Paleo Vegan Mocha Mousse

organic decaf coffee beans, espresso grind

agave nectar or honey

almond extract
Instructions
- Melt chocolate into coconut milk in a medium pot over very low heat.
- Place ground coffee beans in a filter and pour hot water over them.
- Stir the coffee into the chocolate mixture, discarding the grounds.
- Add agave, vanilla, and almond extracts to the mixture and stir well.
- Spoon the mousse into half-cup ramekins.
- Refrigerate for 2-3 hours until firm.
- Serve chilled.
