Paleo Vegan Mocha Mousse

Ingredients

  • ½ cup chocolate chips
  • ½ cup full fat coconut milk
  • 1 tablespoon organic decaf coffee beans, espresso grind
  • ¼ cup hot water
  • 1 tablespoon agave nectar or honey
  • 1 tablespoon vanilla extract
  • ¼ teaspoon almond extract

Instructions

  1. Melt chocolate into coconut milk in a medium pot over very low heat.
  2. Place ground coffee beans in a filter and pour hot water over them.
  3. Stir the coffee into the chocolate mixture, discarding the grounds.
  4. Add agave, vanilla, and almond extracts to the mixture and stir well.
  5. Spoon the mousse into half-cup ramekins.
  6. Refrigerate for 2-3 hours until firm.
  7. Serve chilled.
