Instructions
- 1. Pulse the eggs in a food processor for 3 minutes until fluffy.
- 2. Add the chocolate chips and pulse for 2 minutes until well ground.
- 3. Incorporate the shortening, espresso, cinnamon, vanilla, and coconut sugar into the mixture.
- 4. Process until the mixture reaches the consistency of mousse.
- 5. Spoon the mousse into 6 half-cup ramekins or dessert cups.
- 6. Serve the mousse.
