Ingredients

  • 4 large eggs
  • ½ cup chocolate chips
  • cup palm shortening
  • 1 tablespoon organic decaf coffee beans, espresso grind
  • 1 teaspoon ground cinnamon
  • 1 tablespoon vanilla extract
  • 2 tablespoons coconut sugar

Instructions

  1. 1. Pulse the eggs in a food processor for 3 minutes until fluffy.
  2. 2. Add the chocolate chips and pulse for 2 minutes until well ground.
  3. 3. Incorporate the shortening, espresso, cinnamon, vanilla, and coconut sugar into the mixture.
  4. 4. Process until the mixture reaches the consistency of mousse.
  5. 5. Spoon the mousse into 6 half-cup ramekins or dessert cups.
  6. 6. Serve the mousse.
