Dairy-Free Chocolate Mousse

Instructions
- Heat water and coconut sugar in a medium pot until boiling.
- Remove the pot from the stove and let the mixture cool for 8 minutes.
- Stir in chocolate chips until melted.
- In a separate bowl, beat the egg yolks until pale yellow.
- In another bowl, beat the egg whites to stiff peaks.
- Combine the egg yolks with the chocolate mixture in the pot.
- Gently fold in the beaten egg whites and then stir in the coconut cream.
- Spoon the mousse into jars and refrigerate overnight to set.
- Garnish with chocolate if desired before serving.
