Dairy-Free Chocolate Mousse

Ingredients

  • ¼ cup water
  • ¼ cup coconut sugar
  • 1 cup chocolate chips
  • 4 large eggs, separated
  • ½ cup cream from full fat coconut milk

Instructions

  1. Heat water and coconut sugar in a medium pot until boiling.
  2. Remove the pot from the stove and let the mixture cool for 8 minutes.
  3. Stir in chocolate chips until melted.
  4. In a separate bowl, beat the egg yolks until pale yellow.
  5. In another bowl, beat the egg whites to stiff peaks.
  6. Combine the egg yolks with the chocolate mixture in the pot.
  7. Gently fold in the beaten egg whites and then stir in the coconut cream.
  8. Spoon the mousse into jars and refrigerate overnight to set.
  9. Garnish with chocolate if desired before serving.
