The chocolate topping

Instructions
- Preheat the oven and line a 9×13-inch baking pan with parchment paper.
- Make the crust by processing Oreos into crumbs and mixing with melted butter, then press into the pan and pre-bake for 10 minutes.
- Prepare the peanut butter cheesecake filling by mixing cream cheese and sugar, then adding sour cream, peanut butter, vanilla, salt, and eggs.
- Pour the filling over the crust and bake until set, about 35–38 minutes.
- Cool the bars at room temperature for 1 hour, then chill in the refrigerator for at least 3–4 hours.
- Make the chocolate topping by melting butter and chocolate chips together, then spread over the chilled bars.
- Chill again until the chocolate topping is set, about 45–60 minutes.
- Lift the bars out of the pan using the parchment paper and cut into squares.
