Oreo Cheesecake Bars

Instructions
- Preheat the oven to 325°F and line a 9 x 13-inch pan with foil, leaving a 2-inch overhang on two sides.
- Spray the foil with cooking spray.
- For the crust, process 28 Oreos until finely ground, then mix with melted butter and press into the bottom of the pan.
- Bake the crust for 10 minutes and let it cool on a wire rack.
- Chop the remaining Oreos into rough pieces.
- For the filling, beat cream cheese and sugar until blended, then mix in sour cream, vanilla, and salt.
- Add eggs one at a time, mixing well after each addition, then stir in chopped Oreos.
- Pour the filling over the cooled crust and smooth the top.
- Bake for 40 minutes until the edges are set but the center is still slightly wobbly.
- Cool to room temperature for about 1 hour, then refrigerate for at least 3 hours or overnight.
- Lift the cheesecake out using the foil overhang and cut into bars.
