Oreo Cheesecake (No Bake)

Instructions
- Process 25 Oreo cookies and 2 tablespoons of sugar until fine crumbs form.
- Combine the cookie mixture with melted butter and stir well.
- Coat a 9-inch springform pan with cooking spray and press the cookie crust into the bottom and sides of the pan.
- Chill the crust for at least 30 minutes.
- Beat cream cheese in a mixer until smooth, then add vanilla and ¾ cup sugar and mix until combined.
- Add heavy whipping cream to the cream cheese mixture and beat until stiff peaks form, about 3-5 minutes.
- Spread ⅓ of the cheesecake mixture into the pan, layer 10 whole cookies on top, and repeat, ending with cheesecake mixture.
- Chill the cheesecake for 30 minutes.
- Heat ½ cup cream in a bowl until very hot, then add chopped chocolate and let sit before stirring until smooth.
- Stir in butter until melted, then pour the chocolate mixture over the cheesecake and spread evenly.
- Cover and chill the cheesecake for at least 6 hours or up to 2 days.
- Remove the sides of the springform pan and garnish with whipped cream and chocolate shavings if desired.
