Shortbread Crust

Ingredients

  • 6 tablespoons unsalted butter
  • ¾ cup all-purpose flour
  • ½ cup white whole wheat flour or additional all-purpose flour
  • cup powdered sugar
  • ¼ teaspoon kosher salt
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon water
  • optional lemon zest

Instructions

  1. Coat a 9-inch round tart pan with nonstick spray.
  2. Combine all crust ingredients in a mixer or bowl and mix until a dry cookie-dough-like mixture forms.
  3. Press the dough evenly into the tart pan and trim any excess.
  4. Prick the dough with a fork and freeze for 15 minutes.
  5. Preheat the oven to 350°F.
  6. Bake for 18 to 20 minutes until golden.
  7. Let cool completely before using.
