Ingredients

  • 1 ½ cups all-purpose flour
  • ¼ teaspoon salt
  • cup confectioner’s sugar or powdered sugar
  • 10 tablespoons very cold unsalted butter, cut into small pieces
  • 1 large egg yolk
  • ¼ teaspoon vanilla extract

Instructions

  1. Butter or spray a 10-inch pie pan and set aside.
  2. In a food processor, combine flour, salt, and sugar and pulse to mix.
  3. Add the cold butter and pulse until a rough dough forms.
  4. Incorporate the egg yolk and pulse until the dough barely comes together, then add vanilla extract.
  5. Scoop the dough into the pie pan and gently press it to cover the bottom and sides.
  6. Place the pie pan in the freezer for at least 30 minutes to prevent rising.
  7. Preheat the oven to 400°F (205°C).
  8. Bake the crust on a larger baking sheet until golden brown, about 13-15 minutes.
  9. Remove from the oven and let cool on a wire rack before filling.
