Ingredients

  • 3 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon kosher salt
  • 4 ounces shortening
  • 6 ounces unsalted butter
  • 8-12 tablespoons ice water

Instructions

  1. Combine flour, sugar, and salt, then place in the freezer.
  2. Chill a large bowl in the fridge.
  3. Dice the butter and shortening, then chill again.
  4. Combine the chilled flour mixture with butter and shortening, cutting until it resembles coarse crumbs.
  5. If too soft, chill again, then slowly add ice water until the dough comes together.
  6. Knead the dough lightly and divide into two discs, wrap, and chill for at least an hour.
  7. Roll out the dough on a floured surface to a 12-13 inch round.
  8. Transfer the rolled dough to a pie pan and fit it into the shape of the pan.
  9. Trim excess dough and decorate the edges as desired, then chill for at least 45 minutes before baking.
