Ingredients

  • 1 1/4 cups unbleached all-purpose flour
  • 1 Tbsp granulated sugar
  • ½ tsp salt
  • 10 Tbsp unsalted butter
  • 3 to 4 ½ Tbsp ice water

Instructions

  1. Whisk together flour, sugar, and salt in a mixing bowl.
  2. Cut in the cold butter until pea-sized clumps form.
  3. Add ice water one tablespoon at a time, mixing until the dough holds together.
  4. Transfer the mixture to a clean surface and gently press it together.
  5. Shape the dough into a round disk, wrap in plastic, and chill for at least 1 hour.
  6. Roll out the chilled dough to a 13-inch round on a floured surface.
  7. Transfer the rolled dough to a 9-inch pie plate, trimming excess dough as needed.
  8. Fold the edges under and flute as desired, then chill again for at least 1 hour before baking.
