Homemade Pie Crust

Ingredients

The crust

  • cups all-purpose flour
  • 2 tablespoons white granulated sugar
  • teaspoons kosher salt
  • 1 cup unsalted butter, cold
  • ¾ cup very cold water

For topping

  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon demerara sugar

Instructions

  1. Mix flour, sugar, and salt in a large bowl.
  2. Grate cold butter into the flour mixture and mix until resembling pea-sized bits.
  3. Chill the mixture in the freezer for 10 minutes.
  4. Add about half of the cold water and mix, then add more water gradually until the dough comes together.
  5. Knead the dough briefly on a floured surface and divide it into two discs.
  6. Wrap each disc in plastic wrap and refrigerate for at least 2 hours, ideally overnight.
  7. Roll out the first disc to a 13-inch round and fit it into a pie pan.
  8. Trim the edges, add filling, and repeat the rolling process with the second disc.
