Homemade Pie Crust
Ingredients
The crust

all-purpose flour

unsalted butter, cold

very cold water
For topping

egg, beaten (for egg wash)

demerara sugar
Instructions
- Mix flour, sugar, and salt in a large bowl.
- Grate cold butter into the flour mixture and mix until resembling pea-sized bits.
- Chill the mixture in the freezer for 10 minutes.
- Add about half of the cold water and mix, then add more water gradually until the dough comes together.
- Knead the dough briefly on a floured surface and divide it into two discs.
- Wrap each disc in plastic wrap and refrigerate for at least 2 hours, ideally overnight.
- Roll out the first disc to a 13-inch round and fit it into a pie pan.
- Trim the edges, add filling, and repeat the rolling process with the second disc.
