Easy Tomato & Pasta Salad

Ingredients

The salad

  • ¼ pound kale, loosely chopped or baby kale
  • 8 ounces dried whole-grain short pasta
  • 2 pounds tomatoes, halved or quartered
  • lots of fresh basil, torn or thinly sliced

The dressing

  • 1 teaspoon whole caraway seeds
  • 3 cloves garlic
  • ¼ teaspoon fine grain sea salt
  • 2 tablespoons harissa paste
  • cup fresh lemon juice
  • cup water or almond milk
  • 3 tablespoons nutritional yeast
  • 1 tablespoon tahini (optional)

Optional toppings

  • to taste herb flowers
  • to taste thinly sliced makrut lime leaves
  • to taste torn olives
  • to taste chopped toasted almonds
  • to taste cooked black or French lentils

Instructions

  1. Arrange the kale in a large serving bowl.
  2. Cook the pasta in salted water according to the package instructions, then drain and shake off any excess water.
  3. Toast the caraway seeds in a dry skillet until fragrant, then crush them in a mortar and pestle.
  4. Add garlic and salt to the crushed caraway and make a paste.
  5. Mix in the harissa, lemon juice, water, nutritional yeast, and tahini (if using). Adjust salt to taste.
  6. Pour ⅓ of the dressing over the kale and toss well.
  7. Add the pasta and another third of the dressing, tossing again.
  8. Arrange the tomatoes and basil on top, then gently toss everything together.
  9. Drizzle with the remaining dressing and add any optional toppings before serving.
